San Francisco startup makes wine without grapes

San Francisco startup Endless West, maker of molecular alcohol, just released a 6% ABV wine-like beverage called Gemello. Resembling a Moscato, the product isn’t actually made from grapes. Instead, the lab-grown liquid was made by scientists who mixed water, neutral alcohol, and flavoring molecules to create the elixir. Since 2018, the company has also produced a synthetic whiskey and sake. What will be the future of molecular wine, as climate change affects the way our spirits are produced?
