As the pandemic has stripped cities of foot traffic, these small businesses pivoted towards a new audience seeking the thrill of cuisines like boba tea and bibimbap, USA Today reports. Many food trucks, like their brick-and-mortar counterparts, have closed their establishments permanently. But for the trucks that have readjusted their business models, a handful now sell dinner instead of lunch and kid-friendly options to reach new audiences.
