Virtual restaurants that distribute meals through delivery apps but have no sit-down brick and mortar locations have been increasingly popping up in the last few years, but market researchers are now predicting that the so-called “ghost kitchen” sector could reach $1 trillion by the end of this decade, Insider reports. DoorDash CEO Tony Xu, who earned $414 million as the second-highest paid CEO in the country last year, seems to agree: He’s invested millions of his own fortune into two ghost kitchen startups founded by former Uber Eats and DoorDash employees. Both ghost kitchen businesses are aiming to serve big-city restaurant items to suburbanites via satellite kitchens. Restaurants that share their menus and recipes with these satellite kitchens will earn “royalty income,” but it’s too early to tell how much of the revenue growth in the industry will go to restaurants rather than tech entrepreneurs.
