Last week, USDA appointed ten new members to a food safety advisory council. The new members included a handful of academics and industry representatives—including, The Daily Beast points out, a food safety manager from JBS, the world’s largest meatpacker. That company was behind perhaps the largest-ever recall of ground beef related to Salmonella, back in 2018, pulling 12 million pounds off shelves after hundreds of Americans were sickened. And during the pandemic, it’s had to temporary idle plants in Colorado, Nebraska, Wisconsin, among others, as thousands of workers have fallen ill. The appointment gives new meaning to the term “oversight.”
