The demand for takeout sushi steadily increased over the course of 2020, helping some restaurants stay afloat during massive economic uncertainty, The Wall Street Journal reports. While places like steakhouse and Italian eateries dropped, according to Yelp, the number of sushi restaurants in the country grew by five percent last year. Grocery stores are also selling more sushi, leaving some supermarket chains struggling to train their staff to meet demands. Yet despite the spike in sales, the industry has seen sales plummet by nearly a quarter of what they were in 2019.
